This long waiting period increases the initial costs for farmers.

  2. Labor-Intensive Harvesting:
    Although pistachios grow in clusters on trees, the harvesting process is labor-intensive. Farmers must ensure that pistachios are harvested promptly when they ripen, as any delay can lead to over-drying or spoilage.

  3. Alternate Bearing Nature:
    Pistachio trees are known for their “alternate bearing” nature, meaning they produce a heavy crop one year, followed by a lighter crop the next. This irregularity can impact supply and, consequently, prices.

How Are Pistachio Nuts Shelled?

Pistachios are unique among nuts because many of them are naturally “split” while still on the tree. This natural opening makes the shelling process more efficient. Here’s how it works:

  1. Natural Splitting:
    As pistachios mature on the tree, the kernels inside the shells grow and eventually cause the shell to split naturally. This is why many pistachios in their raw form already have a visible opening.

  2. Mechanical Sorting and Shelling:
    Once harvested, pistachios are sorted by size and quality. Nuts that have naturally split are separated and further processed. These naturally split pistachios are cleaned and packaged as in-shell pistachios.

  3. Shelling Closed Pistachios:
    Pistachios that don’t naturally split (known as “closed shell” pistachios) undergo mechanical shelling. In this process, machines crack the shells without damaging the kernels inside. Closed pistachios are also used to produce shelled pistachios or pistachio products like pistachio butter or flour.

  4. Quality Control:
    After shelling, the nuts are inspected for quality. Any damaged or defective pistachios are removed to ensure only the best nuts make it to market.
